Im no Jamie Oliver but heres a lil something to help keep us on healthy eating plan..
Its still January, and were still broke. We’re nearly there but not yet so the beans on toast diet is still perfectly acceptable… BUT we under estimate the value of eggs.. so heres some nice healthy grub for all of us that promised to make the summer body in the winter.. I bring you.. The Omelette 🥚🥚
Omlettes are something I never ate, not because I disliked them, but if I was having eggs I just rathered eggs boiled, poached, scrambled and bold weekends… fried! I know why though, I was always confused as to what went into them… I know it sounds stupid but ham and cheese in a battered egg just wasnt up my taste bud alley!
Before we get going, get yourself to Tesco and purchase their Sweet Potatoe Fries 👌👌 €2.50 a pack, now I wont lie 1 box = 1 portion so you need a pack per adult person! These are infused with herbs and garlic, not smelly breath garlic, very subtle garlic, have the oven nice and hot as per instructions and some fry light spray (I also add a sprinkle of salt & pepper to them! Get them going and get cracking (no pun intended) on the eggs 😉
Heres what goes into my omlette:
2 eggs (per person)
Mixed bag of Spinach, Rocket & Watercross
Step 1 – Beat the eggs into a large bowl
Step 2 – Dice up all the above and add it to the bowl
Step 3 – Season with smoked paprika and salt & pepper
Step 4 – Add the fry light sunflower oil to your pan, heat it up and pour the mix
Step 5 – When the bottom is cooked and you cant flip it cause its too chunky, have the over preheated, 180 deg (fan) wrap the pan handle in tinfoil (so it doesnt melt) let it bake away and serve 🖒
And its as simple and cheap as that!
